Yogurt-Cucumber Dip (tzatziki)
1 large cucumber, peeled, seeded, and grated
1 teaspoon salt
14 ounces Greek-style yogurt
1 tablespoon chopped fresh dill
2 garlic cloves, minced
2 tablespoons extra virgin olive oil
1 teaspoon white-wine vinegar
In a bowl, sprinkle cucumber with salt; refrigerate A quarter-hour. Drain excess water; stir in remaining ingredients. Refrigerate for many hours.
Salsa Fresca
1 pound ripe tomatoes, seeded and diced
1/3 cup finely chopped fresh cilantro
2 tablespoons freshly squeezed lime juice
1/4 teaspoon salt
1/8 teaspoon freshly ground black pepper
Toss ingredients within a nonmetallic bowl; mix well.
Sesame-Honey Mustard Sauce
1/2 cup honey
1/2 cup mustard (any kind)
1/2 cup fat-free mayonnaise
2 tablespoons sesame seeds, toasted
Combine all ingredients in a bowl; mix well.
